Eat of the Week: Passover Kugel

kugel 2It’s Passover this week, so we’ve been enjoying my dairy noodle kugel. (Kugel  is a baked pudding or casserole,  similar to a pie, most commonly made from egg noodles or potato. It is a traditional Ashkenazi Jewish dish, often served on Shabbat and Yom Tov.) 

Noah in particular is a big fan since my recipe omits refined sugar and uses raisins to add a touch of sweetness to the dish.

Noodle Kugel Recipe

  • 1 package of wide egg noodles (12oz)
  • 1 container of low fat cottage cheese (16oz)
  • 1 container of low fat sour cream (16oz)
  • 5 eggs lightly beaten
  • 1/2 stick of butter melted
  • 1/2 cup of raisins
  • 1 1/2tsp of cinnamon
  • 1tsp of vanilla extract
  1. Cook noodles in boiling water for 4 minutes.
  2. Mix all the ingredients in a large bowl.
  3. Pour into a 9×13 greased baking dish.
  4. Bake for 45-50 minutes at 375F until the center is set and the top edges are golden brown.
